Dried Hachiya Persimmons

During our Thanksgiving dinner at Shauna’s home, Linda and Brad mentioned that they had a lot of persimmons. I joked that they would ring our doorbell and leave a box of fruit.

Linda corrected me: She wouldn’t ring the doorbell.

They left us a box with 36 large Hachiya persimmons.

Dehydrating persimmons is simple. Wash the fruit. Core the top stem out. Trim off any blemishes. Slice thin (about 1/8 inch to 1/4 inch thick). Each fruit fills one dehydrator tray. Stack in a dehydrator for 10-14 hours.

The beauty is that not-quite-ripe fruit loses its astringency and turns into candy jerky.

And here is your dilemma: Dry the fruit thoroughly so it has a long unrefridgerated shelf life. OR…Leave the fruit slightly plump and store it in the refrigerator.
