This is tasty and quick.
- Preheat toaster convection oven to 350
- Wash eggplants; trim off stem; cut in half length-wise; place skin-side down in pan
- Add some cherry tomatoes
- Sprinkle with salt and/or seasonings
- Drizzle with olive oil
- Add crumbled feta cheese
- Bake for 25 minutes
